René Redzepi, 32, chef at the two Michelin star-rated Noma, won earlier this year the award for world’s best restaurant and knoked Ferran Adrià’s El Bulli in Spain to second place. He has been widely credited with re-inventing Nordic cuisine:

Publishing a new book was just a matter of time for Redzepi, and talented photographer Ditte Isager was commissioned to capture the essence of his cuisine – Double joy!
